So I’ve just been using a tool box to store ammo. Is there a reason I should go with actual ammo cans?

Yes you should.

Tool boxes don't even "store" tools well let alone ammo as there is no seal from the elements and they aspirate through expansion and contraction.

Good metal ammo cans can be easier to lock than some tool boxes. As enbloc noted, the good metal ammo cans seal much better than tool boxes which tend to let moisture and air to flow in the box. If you're keeping your ammo indoors where you can regulate heat/AC, then it's probably not that big of a deal (unless your house floods), but if it's the garage all year, it may have an effect over the long term.
