Commodity grade 1911s are not really hand fitted much, or at all. They basically gently ram shit together and if it doesnt work they get different parts and keep trying until they get an end product that's considered "good enough". CNC machining processes typically allow them to make the tolerances close enough, hand selecting parts for mating lets them speed-fit the guns and get them out the door. On the other hand, DW and a bunch of other companies hand fit all their guns. They also don't use MIM junk in their guns either. (this increases the part cost, little parts like safety levers, extractors, slide locks, mag releases, hammers, etc. ). Some MIM parts are perfectly fine but it is kind of embarrassing on a $1000+ 1911 for it to be loaded with MIM.
There's a P220 Legion SAO, or at least it used to exist. (maybe discontinued now?)
The other thing I just thought of..... I'm not sure how many sig 1911s are still floating around in distribution or channels, but Sig might not be putting out a
Legion 1911 because they don't want to blow their own foot off, Say they produce a Legion 1911 at an attractive price point, like $1300. Nobody is going to buy the 900-1100 Sig 1911s anymore theyre going to go to the Legion. Distributors are going to be sitting on their hands with guns, etc. They're going to go "thanks a lot, Sig"
