Welcome Laura, I met alot of great people on NES. i shoot mostly in Taunton but my other shooting buds are in Franklin and Medway and we shoot at Hopkington Sportsclub. We all have different weapons if you want to join us sometime.
Personally I prefer rare. Run it through a warm room. And I never poke holes in good meat. Learn to use your fingers to test for doneness.

Really? So when I smoke ribs or brisket or pork butt, Ive gotten the finger test/feel thing down pretty good but still use the thermapen.
Finger test on a grilled steak you say eh? Ok Im in. Let the googling commence.
