Elk osso bucco

I haven’t done it with elk but do use the meat eater recipe for venison shanks and it is always a favorite.
 
Looks fantastic. Never thought of it. This will be the future plan from now on.

Stripping out the meat in the shank and trying to remove the silver skin is such a time consuming pain in the ass, all just to throw it in the grinder.

Exactly.

I don't get why people grind up the best parts. In cow, people are trying to give you 58 different round roasts and then they take all the chuck areas and grind them into hamburger.

Now, I'm not against a chuck burger. In fact, all of my hand-ground burger is chuck in nature. But if I'm looking for parts to save and parts to grind, I'd be racing to grind most of the rounds and saving the chucks and such.

Low and slow makes such tender, tasty food.

Which reminds me - I've still got a 3# bag of short ribs in teh freezer. I still need to figure out what to do with them. Braise or BBQ. Hmmmmm. Tough call.
