Bow season for elk has started, but so has grouse. I prefer grouse!

Hmm. It's moist. Comparing to chicken, the difference is that grouse has flavor. And adding some salt really draws it out. But the flavor is not overwhelming like some game animals. No need to do anything to hide its flavor, quite the opposite. These birds were loaded with berries, probably service berries and choke cherries.

Looks a bit tough tho. You can do the same aging process as you would do ducks and geese for a more tender bird.
