NH Son Lance is back from a week of fishing in Alaska with AK son Mark. He brought back the usual 50 lbs of salmon and halibut. The sockeye (red) salmon were running. Lance has been smoking them and and they just seem to be better than the other types of salmon. Any experts on smoked salmon out there? I'm not one of them. Jack.
 
Straight smoking is great. Toss on a bed of greens and you’ve got a delicious and healthy salad.

Brining before smoking creates a ton of alternatives for flavoring. It’s pretty safe to get creative with salmon because it has such high oil content and naturally strong flavor.
 
I cold smoke salmon every month or two. Comes out fantastic! I use this recipe roughly. And yes fattier salmon works better.
