Spring foraging: Elm flowers

Elm trees started blooming this week and their tender flowers taste like fresh lettuce.



Wash and drain. Easiest recipe is to make scrambled eggs. You can also lightly coat it with flour then steam for 10 minutes and it’s ready to eat with salt and pepper. Fancier versions you can light stir fry the steamed product with olive oil and garlic.

Neighbors have been out for ramps and morels. When they gather off our place we end up with a cut.
Made blue eggs with cheddar, morels and ramps sautéed in butter, and sliced avocado on english muffins for supper tonight.
Oh my goodness it was delicious!
