    I was surprised by that too. I mingled lots of hickory chips into the snake the full length. A total of 6 hours cooking.

    What you should learn is: with bigger cuts it takes tons time longer. 10-14 hours. Probs my why I tend to do ribs or chicken more often than butt or brisket.

    So having dinner ready Q means starting at 4 or 5am.

    After this experience I agree 100%. Reason being it is mad expensive and I knew I would not be waking up early after 26 hrs of work from Thursday morning through Friday evening!
    I will be starting as early as you said for the 3rd daughter’s 1st B-Day.

    I also would like to experience the cut down of a full brisket from burnt ends to point to flat or the reverse.
