Has anyone done oven canning of their dried goods? I just learned about it this weekend and was wondering if any one else has done this and their success with it? I am going to be doing this later this week.

If you Google the topic you will see numerous people advising against the process; but if you limit the discussion exclusively to dry foods that ordinarily are stored in glass or metal containers without processing, then it seems you'd be ahead of the game.
But since we're now talking just about things (grains, sugar, desiccated fruit) that have a year-or-more shelf life anyway, and assuming you rotate your stock, why spend the money on needless BTU's?
.

The reason I was thinking of trying this is because it is now just my husband and I and we don't go through some things as quickly as when we had the boy living with us.
I would only do this with dry goods. I pressure can or water bath can the things that need to be.
