If you want to customize a printed map on waterproof tear-resistant paper, check out MyTopo. They have two kinds of USGS map, and aerial photos. Scale to as tight as 1:10,000
I've bought a few maps from them, all came out great.
 
If you use mapping often, I can't recommend gaia enough. I started using in massachusetts. Had it there for three years. Now I use it here in Montana. Used it in Wyoming as well. The amount of maps available are staggering and can be very detailed. If the map exists online, they probably have it as an overlay.
