On The Rocks

Those are some nice stones kelton. I use a much cheaper system of hone stones.

Rough surfaces get a Smith's Combo stone: 100/240 grit.
Then I go to a 400/1000 whetstone
Finish stone is 3k/8k whetstone
Last step is an old leather strop made from a belt.

Cheap, but effective...

you been licking the whetstone again? lol

Is that not the way to clean them?

In any event...sharpening newb for sure but, this is my kit

shapton: 400, 1k, 1500, 2k
three way block strop; 3k, 6k, 12k compounds
I never use the 12k but, it's there.

On a convex, I've pushed it across various wet/dry on a leather pad....
I (foolishly) let a friend baton some kindling with my convex knife - nick-aroo [slap] - I have no problem forgiving a mistake but, for the time spent removing it - never again.
[laugh]
...seemed to work very well for a first attempt. Paper slides tight by that spot like the nick was never there.

I didn't screw it up so, it could be truly idiot proof....maybe convex isn't all that tough to maintain!
