New England Steak Tips

I think the Carolinas has to be the worst supermarket steak area possible. Super thin cuts, expensive, crap beef. I also don't see many Costco's down there either. I think Im gonna raise my own cow down there for meat for crying out loud.

I do think they have good steak tips at Texas Roadhouse and that can be found down there....as well as every other chain, but I like their steaks acutally.

yup the best steaks here are a steak & cheese sub.
 
My very simple recipe that has gotten a lot of compliments. For every 1lb - 1.5lb of steak strips, 3/4 cup of soy sauce 3/4 cup of brown sugar, half a teaspoon of garlic powder and a few shakes of black pepper in it. Put it all in a ziplock bag in the fridge and let marinate for at least 8 hours and rotating it every couple hours.
 
Steak tips are the tilapia of the steak world. Fine, basic for everyday home cooking but any restaurant that serves them is just mailing it in IMO. Sure, if the 99 Restaurant is your speed that's fine but any decent restaurant serving tips or tilapia? Nah.

I've always used sirloin tip steak - it's a strip about 2" x 2" x about 6" long, and cut them into 2" long pieces. Drop them into a ziploc bag with a bottle of Italian salad dressing (any brand will do) and let them marinate for 2 - 24 hours and toss them on a hot (hopefully cast iron) grill surface. Cook about 5 - 7 minutes, flip them over and cook for another 5 - 7 minutes until they have well defined grill marks on them. DON'T OVERCOOK!!! Rare/medium rare is where you want to be. Serve them on top of a bed of rice pilaf with some grilled, hot Italian cherry peppers and enjoy with your favorite beverage! Works everytime!!!!
 
I miss a lot things from my time spent in MA,
But I mostly miss the Lobster and Steak Tips!

Back here in New Mexico I have given up on Lobster, but I should be able to make some good Steak Tips.

Searching on the internet I find a bunch of recipes, but they are all very different in their ingredients.

When I lived in Mansfield, the Steak Tips I had at all restaurants were the same, fantastic flavor, probably because they all came from the same supplier.

Anybody here have a good recipe for New England Steak Tips?
Sirloin steak tips.
Grillin with Dad All Purpose Rub + Sweet BBQ rub (mixed)
2.5hrs in Sous Vide at 129.
Sear.

Last week I called my favorite pub in Mansfield
(Catman Cafe,) and he told me they just get it in bags already marinated.

I'm going to try it with Terrayaki marinade base because that is the main flavor I get in the best ones I've had. Also going to use grass fed Sirloin........I don't care about cost.
 
Seems like an awful lot of effort for steak tips.
Not really.

Rub the stuff = 5min tops.
Throw in the sous vide = less than 1min.
Go to the gym. Come back home, shower, sh*t post...
Take them out of the Sous Vide = seconds.
Sear = 1 to 1.5min per side = 2-3min.

The entire cooking and prepping takes less than 10min.

The biggest PITA is cleaning the Blackstone. And takes maybe 3minutes.
 
I think you can order Dom's steaktips online. Champions are great too. I'm a fan of just getting some quality meat and marinating them in Newbridge dressing.
 
This is my mother's old marinade recipe- she used it for lamb shish ke bob, but I've used it for beef as well. I use a light olive oil instead of "salad oil".
½ Cup Salad Oil
¼ Cup Lemon Juice
1 Tsp. Salt
1 Tsp. Marjoram
1 Tsp. Thyme
½ Tsp. Pepper
1 Clove Garlic Minced
½ Cup Chopped Onion
Marinate for at least an hour, overnight is better. Smells like heaven.

I know you know it, but it stands repeating. The meat makes the difference. I can get great tips with lawry's or a number of others, but only with the right cut. Even the butcher shop at Market Basket will sometimes have great cuts with good marbling and no thick chunks of fat. They hate me there because I don't just say give me X lbs, I point to individual tips, I want that one and that one [smile] Be super picky on the meat. Cut them down to 1/3-1/2, marinade 24 hours, cook them fast and hot turning 3 times. Just starting to crisp the outside, the inside will be perfect.

Dam, now I'm hungry, might be a Tucks night.
 
For a super market teriyaki marinade I like Butcher Block. Tips will be tender & juicy with a char on the outside.

I was just in Newport, RI for a few days and visited Pepper Palace (never been - first time). You could sample every item in the shop before you purchase.

Buy 3 get 1 free so I selected a few dry rubs and marinade. Both the ‘best steak marinade’ and ‘coffee rub’ were excellent! Have already marinated sirloin tips and used the dry rub on a ribeye. Damn good! Not sure of locations in NM, but they are all over New England and $60+ online ships free.

No recipe, but now I'm hungry. 1 lb of Steak Tips plus sides is our "standard" menu when we hit the Tuckaway Tavern in Raymond, NH. Can't wait for September to come.

But... your location (3660 miles east of Beantown) shows as Cherbourg-en-Cotentin in France. I thought you were in Germany?

Finding non marinated and seasoning like beef should be is pretty good. NE steak tips should be renamed candied beef
 
The Ground Round used to have a teriyaki steak I loved hard to find these days. The Meatcutter (long gone) in Millis used to have steak tips with his own marinade used to love those too.

the Ground Round is back. They just recently opened again in Shrewsbury

Normally I’d agree but that was more to tenderize cheap cuts for people that didn’t know how to cook.

Salt and sugar tenderize equally. I just can't stand the sugar shit. Especially holiday parties. "Oh look, Trevor brought a tray of Dr pepper pulled pork!"
