I miss a lot things from my time spent in MA,
But I mostly miss the Lobster and Steak Tips!

Back here in New Mexico I have given up on Lobster, but I should be able to make some good Steak Tips.

Searching on the internet I find a bunch of recipes, but they are all very different in their ingredients.

When I lived in Mansfield, the Steak Tips I had at all restaurants were the same, fantastic flavor, probably because they all came from the same supplier.

Anybody here have a good recipe for New England Steak Tips?
 
A friend of mine said Flank Steak was the cut he used for making steak tips

If it makes you feel any better steak tips don't exist in Florida either
 
Many other parts of the country will refer to the "cut" as flap steak/meat. So look for flap meat in the grocery. It may be a larger piece - kind of like a flat iron, brisket, flank. so just cut across the grain
 
Steak tips are definitely a New England thing...and I missed them for the years I lived in South Florida.

My grandparents lived in Malden, and now every time I fly into Logan, I stop at Dom's in Malden to stock up my freezer before driving home to NH.

I'm sure it's not cheap, but they do ship.

 
those are definitely different cuts.. brisket is NOT the same as sirloin or round tip..

@Skysoldier , if in question, ask the butcher at the market.

I'm not saying they are the same... they are very different.

I just mean the size of a flap steak / flap meat in packaging will be a larger piece of meat. If he's looking for cubes / tips sized cuts, then he'll never find it.
 
Throw tips in ziploc and toss in 1 bottle of Ken's Italian dressing, 1 bottle of Ken's Creamy Italian and 1 bottle of basic BBQ sauce.

Cut is flank or flap per my butcher when asked. More typically flap... whatever that is
 
Usually get steak tips at Costco which is pretty large package. Cut them into whatever size pieces you like throw in large sealable bag add fresh pressed garlic 4 or 5 good sized cloves, fresh minced ginger, couple tablespoons brown sugar, kikoman terriyaki sauce and marinade. Mix well and let it sit for a few hours or overnight. I grill mine.

Buy flank or flap and cut them. They sell it down there. Actually they are not good cuts of meat.....its not Sirloin, although its called Sirloin tip. Chewy usually, so I don't know what the big deal is with them.

While more expensive, I just buy NY strip at Costco or BJ's.......and we don't eat that much anymore.....a 3 pack of 10 dollar each strip steaks is 5 meals...and its fantastic if they are cut 1.5" thick like they are supposed to be.

I used to live in Malden, and Dom's is awesome. Still make the trip now and then to stock up on tips and sausage. Like someone else mentioned, they sell their original marinade in bottles too.

We have an IGA 'butcher shop' and I'm going to ask them for some 'sirloin flap meat' which will be the right meat. then it's getting a good marinade or spice blend.

places like Dom's don't just marinade. they put the meat and marinade in a big drum like a rock tumbler and let that run for a while to infuse the flavor and tenderize the meat.
 
@Skysoldier I have no steak tip advice but if you want to splurge, plenty of Maine lobster places will ship you “live and kicking” Lobstah…..I worked with a guy who sent a dozen live Lobsters to a client who had never had Maine Lobster. He was annoyed when the client never mentioned it or thanked him. Then one day he inquired and the guy said he felt bad about telling him they arrived spoiled because they were all reddish/bluish/black, so he threw them away 😂. This was long before the internet.

I think the Carolinas has to be the worst supermarket steak area possible. Super thin cuts, expensive, crap beef. I also don't see many Costco's down there either. I think Im gonna raise my own cow down there for meat for crying out loud.

I do think they have good steak tips at Texas Roadhouse and that can be found down there....as well as every other chain, but I like their steaks acutally.
