Can you damage your rifles or ammo if you place too big of a dehumidifier in your gun safe. For example, if you have a 150 cu ft safe but use a dehumidifier for a 200-600 cu ft safe?

No, because regardless of the nominal capacity of the dehumidifier, its performance will become asymptotic to about 20% nominal relative humidity. At that point, either it shuts down on a humidistat, or it keeps running but can't squeeze out any more moisture.

However, you don't need anything fancy. I've been using "Goldenrods" for decades and they do the job just fine. Unlike traditional dehumidifiers, they do not need periodic dumping and they have no risk of overflowing.
