In full disclosure. I got the rooster and Dad got the hen. I did try the "stand on the wing and pull the legs" method of gutting and it seemed to work fine. Not sure if its really faster than breasting the old fashion way.

Huge fan of that stand on the wings method.
For quail I just tuck my finger behind the collar bone and yank the breast off the rest of the bird. Works great. Way faster that breasting it out.

Just got back in from taking the biggest bird I've ever taken! Size of a chicken! Took him at 15 yards with Black Cloud #4 (all I had with me, forgot the bird shot) and I took his head clean off!!! First time I've ever done that.
