I set my oven to 210 degrees. With this piece I brought internal temp to 98 degrees. Pulled it. Brought oven to 525, sprayed backstrap with a little olive oil then into the oven for ten minutes.Cast iron on a hot stove is insane! The meat comes out cooked to perfection if you do it the right way.
Love itI cooked up this today , delicious. Not backstraps , those are all gone.
