Question for the NES
If you hire someone to work Mon-Thursday 9am-2pm and after several weeks they tell you they have another got another job during those hours but can now work 'evenings' for you, what would your response be?

WTF?! I hired explicitly for these hours. If I had turned the tables on the employee and said, I want you to work 6-11pm, they would have walked out.
I need to work with this person. Not holding hands but we coordinate. I want her available when I can work with her.
Is that too much to ask?

I'm sorry we have no hours available during those times. If you can't work the hours you agreed to when you were hired I'll expect your resignation in writing by the close of business today.

Even then, if this was just dropped in the bosses lap, it basically says "I can work these hours instead, but if not then I'm taking the other job". If I did that, as much as my bosses like me, they would come back with "Sorry to hear your quitting without notice, enjoy your new job. Someone will cover your hours for the rest of the week."

I would be fine with it if they are good at what you need them to do....pay them more if they have the skills.
