Don't thaw at room temp. The best way is to either do it in the fridge (24 hours/5 pounds) or just cook it from frozen and add about 50% or so to the cook time.
Thawing at room temp, especially as long as a 25 pounder would take, is just asking for trouble.

Carl, I couldn't give you an exact time but MM2AC is right. Thawing at room temperature is a bad idea. Your best bet is to put it either in a pplugged sink or a large bucket and thaw it using cool water. The more you keep the water moving, the faster it will thaw. It will probably still take 12 hours to thaw but you'll avoid a trip to the ER.

I wouldnt cook it frozen, the outside will be crispafied while the inside is still frozen, then you will have a perfect microbial storm.
